Maklike Pizzadeeg / Easy pizza dough

Bestanddele/Ingredients

200g Botter of margarine/ 200g butter or margarine
300g Bruismeel/300g self-raising flour
1 Eier, geklits/1 egg whisked
¾ Koppie melk/¾ cup milk
Sout/salt
Tamatiesmeer/tomato paste

Metode/Method

• Frummel die meel, botter en sout totdat dit klontjies vorm /rub flour, butter & salt till crumbed
• Meng die eier en die melk, en roer dit stadig by meelmengsel/mix egg & milk & add to flour mixture slowly
• Meng goed/mix well
• Rol die deeg dun uit/roll dough out thinly
• Druk dit in ‘n bottergesmeerde plat pan/spread in buttered flat pan
• Bak teen 180 grade vir 10 minute – die deeg sal begin bruin word/ bake at 180 degrees for 10 minutes. Dough will turn brown
• Haal dit uit die oond en smeer dit met die tamatiesmeer./remove from oven and spread with tomato paste
• Pak jou gunsteling pizzabestanddele daarop en bak in die oond tot die kaas gesmelt het/top with your favourite pizza ingredients and bake in oven till cheese has melted

Eiervrug oondskottel / Brinjal oven dish

Bestanddele/Ingredients

Eiervrugte/Brinjals
3 Middelslag eiervrugte in 1 cm skywe gesny/ 3 medium sized brinjals sliced in 1 cm disks
3 Eetlepels olyfolie/3 table spoons olive oil
Sout en peper/salt & pepper

Tamatiesous/Tomato sauce:
1 Ui, opgekap/1 chopped onion
2 Knoffelhuisies/2 garlic cloves
2 Eetlepels olyfolie/2 tablespoons olive oil
400g Geblikte tamaties/400 g canned tomatoes
½ Teelepel tiemie/½ teaspoon thyme
¼ Koppie hoenderaftreksel/¼ cup chicken stock
2 Eetlepels tamatiepasta/2 tablespoons tomato paste
2 Eetlepels witwyn/2 tablespoons white wine

Bolaag/Topping:
1 Eier/1 egg
1 Koppie dik Griekse joghurt/1 cup thick Greek yogurt
100g Fetakaas, gekrummel/100g crumbed feta cheese

Metode/Method

• Eiervrugte/Brinjals
• Verf die skywe eiervrug elk met olyfolie/paint brinjals with olive oil
• Rooster die eiervrygte totdat dit goudbruin is aan albei kante/ roast bringals till golden brown on both sides
• Sprinkel sout en peper bo-oor/sprinkle with salt & pepper

• Tamatiesous/Tomato sauce:
• Soteer een gekapte ui/saute 1 chopped onion
• Voeg 2 gekneusde knoffelhuisies by en soteer saam met sowat 2 eetlepels olyfolie/add 2 crushed garlic cloves & sauté with 2 tablespoons olive oil
• Voeg die geblikte tamaties, tiemie, hoenderaftreksel, tamatiepasta en witwyn by/add canned tomatoes, thyme, chicken stock, tomato paste & white wine
• Kook dit stadig vir omtrent 10 minute/simmer slowly for about 10 minutes
• Druk die tamaties fyner en plaas die mengsel in die bodem van ‘n geskikte oondbak/mash tomatoes & place mixture in an oven dish
• Rangskik die geroosterde eiervrugte bo-op/arrange roasted brinjals on top

• Bolaag/Topping:
• Klits die eier, Grieksejoghurt en gekrummelde fetakaas saam/ mix egg, Greek yogurt & crumbed feta cheese
• Skep oor die gereg/spread over the dish
• Bak in voorverhitte oond teen 190 grade vir ongeveer 25 – 30 minute tot goudbruin/bake in pre-heated oven at 190 degrees for 25 – 30 minutes till golden brown

Koue sjokoladepoeding / Cold chocolate pudding

Bestanddele/Ingredients

1 Blik kondensmelk/1 tin condensed milk
3 Sjokolade rolkoeke/3 chocolate Swiss rolls
1½ Houer roomkaas/1½ container cream cheese
50ml Sjerrie/50ml sherry
1 Blik aarbeie/1 tin strawberries
1 Blik bessies/kersies/1 tin berries/cherries

Metode/Method

• Sny die rolkoeke in 1½ cm skywe/cut Swiss rolls in 1½ cm slices
• Meng die kondensmelk met die roomkaas/mix condensed milk with cream cheese
• Meng aarbeie en kersies/bessies/mix strawberries & berries/ cherries
• Plaas die helfte van die koekskywe onder in ‘n glasbak/place half of Swiss roll in bottom of glass dish
• Sprinkel ‘n bietjie sjerrie oor/sprinkle with sherry
• Smeer die helfte van die kondensmelkmengsel oor/spread half of condensed milk mixture over
• Bedek met aarbeie en kersies/cover with strawberries & berries
• Herhaal die lae/repeat layers
• Sit in yskas vir ‘n uur/place in fridge for 1 hour
